Dip Into Sunday Funday
Slowly but surely I’ve been converting into a more serious football fan by my boyfriend. He’s a Browns fan, which I’m learning could mean I’m in for a long season, but I’ve also got the Pats thanks to my friend Billie who might rethink our friendship if I didn’t support the team.
Thankfully the one thing I can really bring to the table, literally, on Sunday Funday is great game day food. I love having a group over and turning up the sound and watching my living room transform into a stadium. For full authenticity I’ve been working on my snack offerings since what’s a game without a good spread? This “Cowboy Caviar” Dip, no relation to the Dallas Cowboys, is a new one I’ve been putting out for the troops and it’s usually gone within a commercial cycle. Whip this one up to keep the fans, and yourself, happy.
“Cowboy Caviar” Dip
2 Cans Mexican Style Corn
1 Cup Sour Cream
2 Cups Shredded Cheese (I use shredded cheddar)
1 Can of Rotel Tomatoes with Habanero
¼ Cup of Chopped Scallions
Mix together all ingredients, refrigerate and serve with your choice of chips.
